Enjoyed very much the cooked meal made by the self-taught chef at Agave Grill...the best meal I've had on Cayman. Not fussy, not silly, not little twists and dated squares centered on a giant plate, but good real food with real tastes and textures. Still beautiful and designed, but not cliche.
The culinary arts have been so weak in the last 20 years...more of the same little bits arranged with the modernism of hopeless dieting in a candy shop. It isn't interesting any more. It's an embarrassing modernist hash for those who sling it.
Instead, bury your top-notch tequila in an innovative prickly pear punch. Make beans have taste, texture and still be beans. Make tacos in cool shapes filled with savories. Use top-notch cheese with real taste.
Agave Grill...I'll be back.
